I think I solved the issue. I think the problem comes from when I put my PC to sleep or goes to sleep. Once I wake it up, and do some flying, I bet some of the files or drivers or something does not load. I just took 4 flights in the P-51 with NO turning!! Even with the rudder not changed to 6.0 right it still stayed on the runway. Interesting though.. It is best to fire up the rig from cold start that way, all of the files and drivers are loaded correctly.

Aha good stuff. A PC restart should be something always done after installing software and updates and also tends to be taken for granted as a first troubleshooting step along with sim restarts.
