What are the parameters to modify (cfg panel?) to definitively set the pilot seat height?

If you open the aircraft.cfg, you'll find the following section:
Altering the last of these entries will change the height of your viewpoint.

Another option, if you have a controller with a spare 4-way rocker switch, is to set it up for eyepoint, up, forward, down, and back respectively in your P3D or FSX options. I keep the standard eyepoint, which works pretty good for seeing forward over the cowling, then hit the down rocker on my Thrustmaster throttle to see under the wing on my Cessna 182. Probably I should invest in a Hat Tracker...
