There is also IRL the consideration when operating out of soft/muddy fields that not having fairings can reduce the amount of mud and grass needing to be removed from the wheel area.

Absolutely, good point. I've got zero experience on operating these from mud or particularly soft ground, but even on regular grass, I'd consider removing these if operated on constant basis from grass of any significant height.
