Autopilot in NAV mode and HDG

I am sure I am missing something,

If I am flying with the autopilot on in NAV mode inbound a specific radial VOR, I see the needle of the VOR correctly set.
why if I move the HDG knob the aircraft changes direction? Shouldn't it act only in HDG mode?
