... In my cfs3 config it gives the option for different AA but it won't let me select one ... This is a known bug in cfs3config. One way out is to set AA in your graphics card settings. There is a thread about this at sim-outhouse. Never mind the AA, these are great pictures of fantastic improvemen...

Spikes in your throttle control?

Just use the Zoom In and Zoom Out keys.
The default key assignements are [ (left bracket) and ] (right bracket).
This is a basic CFS3 key command.

I remember trying to get rid of the same problem for days untill...
I switched the autopilot off.

The "radar-thing" is called the Tactical Display.
Toggle on/off with SHIFT + T

Aircraft labels toggle is CONTROL + SHIFT + L

However, these are default key assignements.
You can view and change them in the main screen:
