Can anyone help me with exactly how to use this data with the Reality XP GPSs? What files to copy where, and which ones need to be renamed to what? Thanks ahead of time.

For a slightly relaxed realism and quirkyness if you like the idea of playing around with rockets give the game 'kerbal space program' a go. It's a great game and learning exprience. From the manual that came with the product the maximum demonstrated crosswind, takeoff or landing, is 15 knots.
