I noticed the stutters in the movie but that comes down to the capture of the video. If FRAPS was used (I'm assuming that it was) it creates an overhead on the PC. Well a lot of sims by default have weapons set on easy, this is so that those new dont find it such a shock when their bullets dont fly like lasers!

Many of the seasoned players will of course go with the gravity options.
