Noticed the panel layout modelled differently from that of the real Cub as shown in the various videos. Any reason why this is so?

I can't speak for A2A, but I've flown various Cubs in real life and everyone has their panel laid out a little different. There does seem to be a stock layout that is consistent in true "stock" Cubs: http://www.stinsonflyer.com/prop/ij3-1c.jpg

I prefer that layout, as well.

There are indeed various layouts, and I believe it also changed depending on the year the Cub was made.
